This coffee comes from a small private washing station called Sironko Coffee Yard, which collects the coffee from Kuku Revival, a community of 239 smallholders in the Mbale area of Eastern Uganda, close to the Kenyan border.
The Sironko Coffee Yard, established in 2018, is a new private collection center and drying station. The station is equipped with modern software to track and isolate each delivery and track them into microlots. Through this system, any quality based premium price the single lot can achieve after processing is paid directly to the farmers. The varieties grown in this region are mainly SL28 and 34, very similar to what they grow on the Kenyan side of the border.
After delivery, the cherries are floated, hand-sorted to remove lower-quality cherries, and fermented in barrels for 36 - 48 hours, then moved to tables for further hand-sorting. They are dried carefully for 15–20 days. During this period, they are turned frequently and covered during the hottest hours of the day to provide protection from intense sunlight, then again at night to protect against humidity. This creates a slow and homogenous drying process, which adds to the coffee’s quality. Drying naturals takes between 15 to 20 days.
In the cup, this coffee is sweet and creamy, with bright blueberry, apple, and jasmine florals notes.
The coffee is roasted to order with two separated roasting profiles: one for espresso and the other for filter extractions.
