The Clever Dripper is a forgiving extraction method that successfully combines the advantages of immersion with the clean profile resulting from the paper filter use. The result is a complex and perfectly extracted cup.

The Step-by-Step Guide
- 1prepare and rinse the filter
Fold the bonded seams of the filter towards the filter itself. Insert the filter into the Clever Dripper and rinse it completely with pre-heated water from the kettle. Place the Clever over the cup to drain the excess water, then empty the cup. Leave the filter inside the Clever.
- 2weight and grind the coffee
Grind about 22g of coffee. Grind the beans to a medium-coarse consistency, slightly coarser that that used for V60 extraction.
- 3pour and level the grounds
Place the clever on the small plastic dish supplied with the dripper. Pour the coffee grounds in the filter, lift and shake gently the Clever Dripper to level the grounds. Place the dish on the scale, the Clever on the dish and tare the scale.
- 4boil and pour the water
Allow the water to reach the boil, then wait for 45-60 seconds. Pour 350g of water in the Clever, taking care to cover slowly and evenly the coffee grounds with water. When the scale 350g, start the timer and wait 30 seconds.
- 5stir the grounds
When the timer reaches 30 seconds, quickly and gently stir the grounds. Cover the Clever with the provided lid.
When the timer reaches the 2 minutes, set the clever over a mug or server and release the brewed coffee. The coffee should flow into the mug in about 60 to 90 seconds.
